Castel di Salve is one of the historic wine companies of Puglia, and is still run by the 4th and 5th generation of winemakers from the Winspeare family, who arrived from England in the 18th century. The nineteenth-century cellar, built adjacent to Winspeare Castle, is one of the few examples of pre-war industrial architecture in Salento.

Wine production is limited, with a focus on local varieties. Among the first companies to welcome guests in Puglia.
